Unnakai
Unnakai are Malabar stuffed banana fritters made from ripe plantain dough wrapped around coconut, nuts, raisins, and cardamom. Fried until golden, they are sweet, soft, and often served for Ramadan snacks.

Steam or roast ripe plantains until tender, then mash into a smooth dough with a little rice flour.
Fry coconut, cashews, raisins, sugar, and cardamom in ghee for the filling.
Flatten plantain dough in the palm, add filling, and seal into spindle-shaped rolls.
Fry the unnakai until golden and serve warm.
