German Spice Bars(Lebkuchen)
German Spice Bars, or lebkuchen, are honey-sweetened holiday bars scented with cinnamon, ginger, cardamom, cloves, almonds, and candied citrus peel. A thin lemon glaze seals the chewy bars and lets them keep beautifully in an airtight tin.
Warm the honey and sugar in a saucepan just until fluid, then stir in the butter.
Beat in 2 cups flour and the baking powder until smooth.
Add the almonds, candied peels, ginger, cardamom, cinnamon, cloves, and baking soda if using molasses.
Work in enough remaining flour to make a thick, pliable dough.
Pat the dough about 1/4 inch thick into greased pans.
Bake at 350 F for about 25 minutes, until set and fragrant.
Cool, glaze with lemon glaze, and cut into square bars.
