Zuccotto
Zuccotto is a chilled Italian dome of sponge cake wrapped around ricotta cream, chocolate, pistachio, and candied fruit. A dusting of cocoa reveals the curved shell and creamy mosaic center.

Line a bowl with plastic wrap and fit sponge slices tightly around the inside.
Brush the sponge lightly with syrup so it bends without becoming soggy.
Fold ricotta, whipped cream, sugar, vanilla, chocolate, pistachios, and candied orange together.
Pack the filling into the lined bowl, cover with more sponge, and chill until firm.
Unmold the dome, dust with cocoa, and slice to show the filling.
