Enokoro Meshi
Enokoro meshi is prepared as a Japanese mixed rice with foxtail millet, vegetables, mushrooms, sesame, and scallions. The millet adds tiny golden grains and a nutty aroma, while the rice keeps the bowl soft enough to serve with pickles or grilled fish.

Rinse rice and millet until the water runs mostly clear, then drain well.
Combine grains with dashi, soy sauce, mirin, mushrooms, carrot, and burdock in a rice cooker or pot.
Cook until the grains are tender and the liquid is absorbed, then rest covered for ten minutes.
Fluff gently and finish with sesame seeds and scallions.
