Chicken Okra Gumbo
Chicken Okra Gumbo is an moderately easy dinner. Made with 2 chicken breasts, skinless and split, 2 qt. water, 1 fresh tomato, chopped, 1 medium onion, chopped and 1 lb. fresh okra, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Base chicken with mixture of 1/4 cup flour, pepper and salt (optional).
In a heavy skillet, fry chicken in margarine until brown; set aside.
Fry okra, tomato and onion in the same pan with the margarine used to cook the chicken.
Set vegetables aside and reserve 2 tablespoons of fat from pan.
In about a 6-quart kettle, add 1/4 flour to the reserved cooking fat, stirring constantly over low heat until light brown, not burnt.
Add water, pepper and vegetables.
Stir a few minutes.
Add fried chicken.
Cook for about 1 hour or until chicken is tender and coming apart.
