Kidyo, also called kulkul, are Goan and Mangalorean Christmas sweets shaped like tiny curled shells, fried crisp and coated in sugar syrup. Their ridges, coconut richness, and cardamom scent make them festive.

Rub ghee into flour and semolina, then mix with coconut milk, sugar, cardamom, and salt to form a firm dough.
Rest the dough, pinch off small pieces, and roll each one over a fork or comb to make ridged curls.
Fry the kidyo slowly until golden and crisp through the center.
Toss with powdered sugar or a light sugar syrup glaze and cool before storing.
