Early in day: combine yeast,

1 cup flour and 1 teaspoon quart saucepan over medium heat, heat milk, 2 tablespoons and 1/4 cup water until very warm (120°

130°).

Low speed, gradually beat milk mixture into dry ingredients just until blended. Increase speed to medium; beat 2 minutes, occasionally scraping bowl with rubber spatula.

Beat in 1/2 cup flour to make a thick batter; continue beating 2 minutes, scraping bowl often.

With wooden spoon, stir in 1 cup flour to make a soft dough.

Sprinkle work surface remaining

1/2 cup flour, turn dough onto work surface and knead until smooth and elastic, about 8 minutes. Shape place in greased large bowl, turning dough to grease top.

Cover; let rise in warm place until double, about 1 to 1 1/2 hours.
