Simmer beef and tripe separately until tender, then cut into bite-size pieces.
Blend shallots, garlic, candlenut, coriander, cumin, and turmeric into a spice paste.
Fry the paste with lemongrass and bay until fragrant.
Add beef, offal, broth, and coconut milk and simmer until rich.
Serve with chives, lime, sambal, and crackers.
