Dodol Betawi
Dodol betawi is a Betawi coconut and palm-sugar sweet cooked until dark, glossy, and chewy. Sliced on banana leaf, it shows a sticky rice-flour texture and caramel depth.

Dissolve palm sugar and brown sugar into coconut milk with pandan and a pinch of salt.
Whisk in glutinous rice flour until smooth, then cook over low heat.
Stir constantly as the mixture thickens, darkens, and pulls from the pan.
Spread into an oiled, banana-leaf-lined tray and let it cool until firm.
Slice into sticky rectangles and serve at room temperature.
