Two Bean Chicken Salad
Two Bean Chicken Salad is an moderately easy dinner. Made with 1/2 lb. green beans, 4 c. water, 1 (15 oz.) can green giant or joan of arc garbanzo beans, drained and rinsed, 2 c. cooked chicken strips (1/4 x 1/2-inch) and 1 medium tomato, cubed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Trim green beans; cut diagonally into thirds.
In a medium saucepan bring water to a boil.
Add greens; bring water to a second boil.
Boil 3 minutes.
Drain; immediately plunge into ice water to chill.
Drain thoroughly.
In a large bowl combine green beans, garbanzo beans, chicken and tomato; mix lightly.
Add dressing; toss lightly.
Serve immediately or refrigerate until ready to serve.
Makes 4 one-half cup servings (440 calories).
