Swiss Steak
Swiss Steak is an moderately easy dinner. Made with 2 or 3 lb. round steak, cut 1-inch thick, 2 tsp. salt, 1/2 c. flour, 3 tbsp. fat and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine salt with flour, pound seasoned flour into steak with a meat mallet.
Place fat in skillet on medium heat.
Brown well on both sides.
After browning, remove from skillet.
Saute onion and peppers in remaining fat.
Add water and tomato juice, thicken slightly with flour and water paste.
Return steak to gravy, cover skillet and bake in oven on low heat until tender, about 1 1/2 hours.
Serves 6.
