Swiss Steak
Swiss Steak is an moderately easy dinner. Made with 2 lb. round steak (1/2-inch thick), 1/2 c. flour, 2 tsp. salt, 1 tsp. paprika and 1/2 tsp. black pepper, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix on a sheet of wax paper the flour, salt, paprika and black pepper.
Tenderize steak and cut into serving portions, dredging well in seasoned flour.
Heat 1/2 cup oil in heavy skillet and brown meat over medium heat.
Remove meat to platter.
Add to the skillet the remainder of seasoned flour and stir until browned. Add 2 cups of water and cook until slightly thickened.
Return steak to skillet.
Add chopped onions, tomato juice or tomatoes as you like.
Cover and cook over low heat for 1 1/2 hours or until meat is fork-tender.
