Stir-Fried Chicken And Vegetables is an impressive dinner. Made with 2 tbsp. olive oil, 2 whole chicken breasts, skinned, boned and cut into 1 inch pieces (about 1 lb. boneless), 2 c. broccoli florets, 1 small red or green pepper, chunked and 2 c. cauliflower florets, this recipe delivers authentic, satisfying flavors. In skillet, heat oil and cook chicken a few pieces at a time, until lightly browned.
Drain on paper towel.
In same skillet over medium heat, cook vegetables until they are tender-crisp.
In small bowl stir together V-8 juice, cornstarch, soy sauce, sugar and ginger.
Gradually stir into vegetables.
Cook until boils. Add chicken and heat through, stirring occasionally.
Serve over hot cooked rice.
