Snow Skin Mooncake
Snow skin mooncakes use a soft chilled rice-flour wrapper around lotus, custard, or salted-yolk filling. This pale version is delicate, floral, and served cold rather than baked.

Steam glutinous rice flour, rice flour, wheat starch, milk, sugar, and oil into a soft dough.
Knead the cooled dough until smooth, then tint it lightly if desired.
Portion lotus or custard filling and wrap each piece in snow skin dough.
Press into mooncake molds dusted with cooked rice flour.
Chill until firm and slice one mooncake to show the filling.
