Mimosa Salad
This mimosa salad is a round Russian layered terrine of fish, potato, carrot, egg, cheese, and mayonnaise. A removed wedge shows the soft layers under a bright grated-yolk top.

Grate potatoes, carrots, egg whites, yolks, and cheese into separate bowls.
Press potatoes, fish, onion, carrots, cheese, and egg whites into a ring mold with thin mayonnaise layers.
Season each layer lightly so the fish remains clear but not salty.
Cover the top with grated egg yolk and chives.
Chill until firm, then remove a wedge to show the layers.
