Heat a frying pan.

Add the olive oil, onions, garlic, celery and peppers.

Saute until the whites of the onions turn clear.

Add ground turkey.

Cook until the turkey is done.

Drain well.

Add approximately 1/3 cup of the wine into the pan.

Simmer until the wine is reduced by half.

Drain well again.

The wine will cut the olive oil and some of the fat of the turkey and add taste.

Mix meat mixture with thawed and drained spinach.

Put tofu in a blender and blend until smooth.

Stir into mixture.

Stir in rest of the ingredients.

Preheat oven to 350Β°.

Stuff manicotti tubes with the mixture.

Place stuffed tubes in a glass roasting dish. Pour fat free commercial (Healthy Choice is good) or homemade spaghetti sauce.

It must cover the tubes.

Bake covered for 1 hour.

Serve tubes with low-fat grated Romano cheese.
