Gumbo
Gumbo is an impressive dinner. Made with 1/3 c. oil, 1/3 c. flour, 1 c. chopped onion, 1 c. chopped green pepper and 1 c. chopped celery, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Heat oil in a heavy skillet and add flour.
Stir over medium heat until caramel color.
This mixture is called "roux."
Set this aside.
Saute onion, pepper, celery and garlic in 2 tablespoons oil.
Add gumbo seasoning and okra.
Cook 3 minutes.
In large pot, combine roux and vegetables.
Stir in chicken broth, sausage and tomatoes.
Simmer 20 minutes.
Before serving, stir in shrimp and chicken.
Simmer 2 to 3 minutes.
Serve in bowls; garnish with chopped parsley.
