German Potato Salad
This German Potato Salad features warm red-skin new potatoes tossed with onion, celery, cider vinegar, hot bacon drippings, crumbled bacon, salt, pepper, and parsley. It is sharp, smoky, and intentionally less creamy than mayonnaise-based picnic salads.
Boil the potatoes until tender, then peel and slice them while still warm.
Place the warm potato slices in a large bowl with the onions and celery.
Pour the cider vinegar and hot bacon drippings over the potatoes while stirring gently.
Season with salt and pepper, then garnish with crumbled bacon and parsley.
Taste and add a small sprinkle of sugar only if the vinegar needs balancing.
