German Potato Salad
This German Potato Salad has a darker, spicier dressing made with bacon, soft onions, sugar, dark vinegar, flour, paprika, black pepper, and salt. Warm sliced potatoes soak up the dressing for a smoky, sweet-sour salad with a paprika finish.
Fry the bacon until crisp, then discard most of the grease.
Cook the onions in the remaining grease until soft but not brown.
In another pan, mix the sugar and flour.
Add the dark vinegar and heat until thickened.
Stir in the salt, paprika, black pepper, onions, and bacon, then set aside briefly so the flavors blend.
Cook the potatoes, cool slightly, and slice them.
