German Bread
German Bread is a lightly sweet yeast loaf flavored with anise seed, milk, eggs, and a cinnamon-sugar finish. The dough is firm and aromatic, making sturdy slices for breakfast, coffee, or holiday bread baskets.
Stir the yeast and 1 teaspoon sugar into the warm water and let it stand until foamy.
Heat the milk with the salt and remaining sugar until warm, then cool it enough that it will not harm the yeast.
Combine 3 cups flour with the milk mixture, eggs, and yeast mixture and beat until smooth.
Add the anise seed and enough remaining flour by hand to make a firm dough.
Knead until elastic, let rise until doubled, shape into loaves, sprinkle with cinnamon sugar if desired, and bake until golden and done through.
