Always skin chicken.
Get lard or oil hot in iron skillet. Salt and flour chicken.
Put into hot oil and turn on medium heat. Turn often.
Cook until tender and golden brown, 30 to 40 minutes.
Remove chicken and put on paper towels to drain.
Pour up all but 1/2 cup of the oil and the crunchies.
Sprinkle 1/4 cup flour in drippings and stir as it browns.
Add 2 to 2 1/2 cups milk slowly, using wire whisk.
Add salt and pepper, if you like it.
Cook until gravy thickens.
