Easy Low-Fat Chili
Easy Low-Fat Chili is an moderately easy dinner. Made with 1 medium onion, chopped, 1/4 c. chopped green pepper, 4 c. water, divided, 1 (15 to 16 oz.) can great northern beans, rinsed and drained and 1 (15 oz.) can navy beans, rinsed and drained, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large saucepan, cook onion and green pepper in 1/2 cup water until tender.
Add beans, tomato paste and tomatoes.
Stir in chili powder (salt, if desired), pepper and remaining water. Bring to a boil.
Reduce heat; cover and simmer for 20 minutes. Makes 7 servings (11 grams protein; 1 gram fat and 0 cholesterol).
