Zucchini Oatmeal Muffins
Zucchini Oatmeal Muffins is an moderately easy dinner. Made with 2 1/2 c. flour, 1 c. nutmeats, chopped, 1 tbsp. baking powder, 1 tsp. cinnamon and 1 medium zucchini, finely shredded, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Into a large bowl, combine the flour, sugar, nuts, oatmeal, baking powder, salt and cinnamon.
In a medium bowl, beat eggs slightly with fork. Stir in zucchini and oil.
Stir in egg mixture all at once into flour mixture just until flour is moistened. (Batter will be lumpy.) Fill muffin tins half full of batter and bake in a preheated 400Β° oven for 25 minutes.
Makes 25 medium muffins.
Freezes well.
