Sugar-Free Apple Pie
Sugar-Free Apple Pie is an easy dinner. Made with 4 c. sliced, peeled apples (sweet varieties are best), 1/2 c. frozen apple juice concentrate, undiluted, 2 tsp. cornstarch, 1/2 tsp. lemon juice and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Roll pastry an 8-inch plate.
Set aside. Mix apples, juice concentrate, cornstarch and spice and stir until apples are well coated. Add lemon juice, if desired, to keep apples lighter colored. Pour into the pastry lined pie pan and top with the second crust or pastry strips.
Seal the edges and cut in the top crust to allow steam to escape.
40 to 45 minutes until golden brown. Makes 8 servings. One serving (including the crust) equals 220 calories, 1 1/2 fruit exchanges, 1 bread exchange, 2 fat exchanges.
