Roasted Garlic and Parmesan Mashed Potatoes
Roasted Garlic And Parmesan Mashed Potatoes is an moderately easy dinner. Preheat oven to 350°.
In a small ovenproof cup or bowl, combine garlic and olive oil.
Cover and bake about 25 minutes or until garlic is very soft.
Leaving oven on at 350° to bake potatoes later, remove garlic from oven and let cool.
Mash with fork, reserving oil.
While garlic is roasting, place potatoes in a pot and cover with water.
Add salt and bring to a boil.
Let cook until tender.
Drain potatoes and place in large bowl.
Add half and half, sour cream, butter, mashed garlic and half of reserved olive oil to potatoes.
