Roast Turkey
Roast Turkey is an moderately easy dinner. Made with 8 to 10 lb. turkey, 1 tsp. sage, 1 tsp. thyme, 1 tbsp. pepper and salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Turkey inside and out.
Remove neck and giblets. Mix spices in a bowl and rub mixture inside and on the outside of the turkey.
Celery and onion in large pieces.
Place along with garlic inside of turkey.
Put bacon strips over the breast.
Add enough steam the bird in moist heat. Maintain water level by checking. Start with 14 coals on top and 14 coals on the bottom for 20 minutes. Then reduce to 12 coals on top and 10 on the bottom for 1 1/2 hours or longer until done.
Replenish coals as needed.
