Potato Dumplings
Potato Dumplings is an moderately easy dinner. Made with 12 oz. day-old bread, cut into cubes, 10 tbsp. (1 1/4 sticks) butter, divided, 3 eggs, beaten, 2 lb. cooked mashed potatoes and 2 1/2 c. flour, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In skillet, saute bread cubes in 2 tablespoons of the butter. In bowl, cream remaining 8 tablespoons butter and add eggs, bread cubes, potatoes, flour and salt.
Mix well.
Form dumplings into tablespoon-size pieces, then roll into ball.
(They should be the size of golf balls.)
Add to large pot of salted boiling water. Cook until they come to the top, then cook 5 to 7 more minutes.
