Old-Fashion Greens
Old-Fashion Greens is an easy dinner. Made with 2 lb. greens (turnip, mustard, kale, collard or mixture of all), 1 lb. ham hock (smoked) with skin removed (note: country ham with fat removed may be substituted), 3 qt. water, 1 small pod fresh or dried chili pepper (note: several good shots of tabasco may be substituted) and salt to taste, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Select tender greens and remove stems.
Add ham hock or country ham to water and boil for 20 to 30 minutes; add chili pepper or Tabasco.
While water is boiling, wash greens good, swishing them good to get all sand off; lift from water and drain. Rinse at least 3 times.
Add greens to boiling water; reduce to simmer and cook slowly until greens are tender.
Serve with pepper vinegar.
