Low-Fat Chili is an moderately easy dinner. Made with 1 tbsp. olive oil, 3 large onions, chopped, 3 cloves garlic, minced, 4 cans kidney or similar beans and 2 cans whole tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onion and garlic in oil.
Add onion, garlic, beans, 2 cups water, tomatoes, sauce, oregano, chili powder and peppers to large pot.
Cook uncovered over low for 15 minutes.
Sprinkle 1 teaspoon Parmesan cheese over each serving.
Makes 8 servings, with 3 grams fat in each.
