Flank Steak Pot Roast(Serves 4)
Flank Steak Pot Roast(Serves 4) is an easy dinner. Made with 1 piece flank steak, fatty tissues removed, leftover rice (enough to layer flat on piece of steak), 1 small can spinach (do not drain liquid), dash of salt and cooking oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Lay flank steak flat.
Mix the leftover rice with sliced canned spinach (liquid and all).
Sprinkle salt into the rice mixture.
Layer rice mixture on flank steak.
Roll the flank steak into a jelly-roll fashion, then tie with twine in 3 places.
Brown the flank steak in the cooking oil; simmer for approximately 45 minutes, covered.
Add a little water if necessary and keep watching.
Make sure liquid does not burn.
Slice the flank steak into 1 to 1 1/2-inch pinwheel sizes and serve with hot rice, mashed potatoes, etc.
