Cream of Potato Soup

Peel and cube potatoes.
Cook in pan with water to cover them. Drain and set aside.
Melt butter in heavy saucepan over low heat; add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
Stir in potatoes, salt and pepper.
Cook 5 minutes or until thoroughly heated.
Yield: About 2 1/2 cups.
