Couscous Salad
Couscous Salad is an moderately easy dinner. Made with 1/4 c. olive oil, 1 large garlic clove, minced, 1 tsp. celery seed, 2 c. couscous and 2 1/4 c. boiling water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Whisk the first 3 ingredients in a small bowl; season with salt and pepper.
Place couscous in a large bowl.
Pour boiling water over; cover and let stand until water is absorbed, about 10 minutes.
Fluff with a fork.
Add shrimp, tomatoes, celery, green onions, mint and capers.
Mix in dressing.
Chill until cold, about 30 minutes, or up to 2 hours.
