Catfish Barbecue
Catfish Barbecue is an moderately easy dinner. Made with 1/3 c. red (low sodium) catsup, 1 tbsp. lemon juice, 1 tsp. brown sugar, 2 tsp. vegetable oil and 1 tsp. worcestershire sauce (low sodium), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine first 8 ingredients in a small bowl.
Arrange fillets on sheet pan or sizzle platter that has been coated with cooking spray.
Pour catsup mixture over fillets; cover and marinate in refrigerator 30 minutes, turning once.
Remove fillets from marinade, reserving the marinade.
Bring marinade to a boil in a small saucepan for 2 minutes.
Place fillets on rack of broiler pan that has been coated with cooking spray.
Broil 6 inches from heat 10 minutes or until fish flakes easily when tested with a fork, basting occasionally with marinade.
Transfer to a serving platter.
