Baked Potato Soup
Baked Potato Soup is an moderately easy dinner. Made with 4 large baking potatoes, 4 green onions, 12 bacon slices, 2/3 c. butter or margarine and 2/3 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash potatoes and prick several times with a fork.
Bake at 400 degrees for 1 hour or until done.
While potatoes are baking, chop onions.
Cook bacon and crumble.
Set aside.
Allow potatoes to cool; cut potatoes in half lengthwise and scoop out pulp.
Melt butter in a heavy saucepan over low heat.
Add flour, stirring constantly until mixture is thickened and bubbly.
Add potato pulp, salt, pepper, 2 tbsp. green onions, 1/2 c. bacon and 1 cup cheese.
Cook until thoroughly heated; stir in sour cream.
Add extra milk if necessary, for desired thickness.
Serve with remaining onion, bacon and cheese on top.
