West African Groundnut Stew
West African Groundnut Stew is an moderately easy dinner. Made with 3 tbsp. oil, 1/2 tsp. nutmeg, 1 tbsp. chili powder, 1 clove garlic, minced and 6 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In large heavy kettle, heat oil; add meat.
When meat is browned, add onion, garlic, nutmeg, chili powder, sliced onion, tomato paste, water and red pepper.
Simmer until meat is tender. A half hour before serving, heat peanut butter and oil in small saucepan.
Stir over medium heat 5 minutes.
Add beef stew and simmer over low heat 20 minutes.
Serve over rice.
