Tomato Catsup Or Chili Sauce is an moderately easy dinner. Made with 1 peck tomatoes, 4 medium onions, 2 green peppers, 1 tsp. pepper and 1/4 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel tomatoes and onions.
Remove seed and stems from peppers and grind or chop fine.
Cook slowly until soft, 30 minutes.
Add pepper, salt, vinegar, sugar and nutmeg.
Boil for 2 hours or until thick.
Then add cornstarch, dissolved in a portion of vinegar.
Tie mixed spices loosely in cheesecloth, removing all but 1 red pepper.
Boil 1/2 hour longer and bottle or put in jars and seal.
For catsup, force this mixture through a fine sieve.
