Swiss Steak
Swiss Steak is an moderately easy dinner. Made with 2 lb. beef round steak, 2 tbsp. all-purpose flour, 4 tbsp. oil, 2 large onions, sliced and 1 medium green pepper, cut into strips, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Trim fat from steak; cut into serving pieces.
On a board, with a meat mallet, pound flour into steak.
In skillet, over medium-high heat, in 2 tablespoons oil, cook meat until well browned on both sides.
Remove steaks from skillet.
In same skillet, heat other 2 tablespoons oil.
Add onions, green pepper and garlic.
Cook until onions are lightly browned.
Stir in tomatoes, salt and pepper; heat to boiling.
Return steaks to skillet.
Reduce heat to low.
Cover; simmer 1 1/2 to 2 hours, until meat is fork-tender.
Remove steaks.
Cook tomato mixture until thickened.
Spoon over steaks.
Great served over rice or noodles.
