Spicy Vegetable Soup is an moderately easy dinner. Made with 1 lb. ground beef, 1 c. chopped onion, 2 cloves garlic, pressed, 1 (30 oz.) jar chunky garden-style spaghetti sauce with mushrooms and peppers and 1 can beef broth, undiluted, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook first 3 ingredients in a large Dutch oven over medium heat until meat is browned, stirring to crumble.
Drain and return meat to Dutch oven.
Add spaghetti sauce and next 6 ingredients. Bring to a boil; cover, reduce heat and simmer 20 minutes, stirring occasionally.
Stir in tomatoes and vegetables.
Return to boil.
Cover and simmer 10 to 12 minutes or until vegetables are tender.
