Scottish Scones
Scottish Scones is an moderately easy dinner. Made with 1 1/4 c. flour, 2 tsp. baking powder, 1/4 c. shortening, 1 c. quick or old fashioned oats and 1/3 c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Sift together flour, sugar, baking powder and salt.
Cut in shortening and butter until mixture resembles coarse crumbs, then mix in oats and currants.
Add milk, mixing just until dry ingredients are moistened.
Turn dough onto lightly floured surface and knead gently 5 times.
Roll to form a 6 or 7-inch circle. Brush dough with 1 tablespoon melted butter and sprinkle with mixture of sugar and cinnamon.
Cut into 6 pie shaped wedges. Place on ungreased cookie sheet and bake at 375Β° for about 15 minutes.
Serve warm with clotted cream or marmalade.
