Sauerkraut Salad
Sauerkraut Salad is a chilled German-style side with chopped kraut, celery, green pepper, onion, pimentos, celery seed, vinegar, sugar, salt, and pepper. After 24 hours in the refrigerator, the dressing softens the kraut and keeps the vegetables crisp.
Drain the sauerkraut well and chop it into roughly 1-inch pieces with kitchen shears.
Place the sauerkraut in a large mixing bowl with celery, green pepper, onion, and pimentos.
Add the sugar, vinegar, salt, pepper, and celery seed.
Mix thoroughly until the vegetables are evenly coated.
Cover and refrigerate for 24 hours before serving; stir again just before bringing it to the table.
