Potato Soup
Potato Soup is an moderately easy dinner. Made with 1 onion, chopped, 2 carrots, diced, 1 c. celery, diced, 2 tbsp. fresh parsley, chopped and salt and pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Bring to a boil onion, carrot, celery and parsley in 4 cups water.
(It is important to measure water.)
Season with salt and pepper.
Lower heat and cook for 15 minutes (covered).
Add potatoes, mushrooms and marjoram.
Cook until potatoes are done, about 30 minutes.
Combine flour and margarine.
Stir into soup. Cook 5 minutes, stirring as mixture thickens.
Makes 4 servings.
