Pat's Blackened Flank Steak
Pat'S Blackened Flank Steak is an moderately easy dinner. Made with 1 or 2 flank steaks (1 to 1 1/4 lb. each), 1 1/2 tsp. salt, 1 1/2 tbsp. white pepper, 1 1/2 tbsp. whole black peppercorns and 1 1/2 tbsp. fennel seed, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Grind all ingredients, except steak in food processor or blender.
Coat both sides of flank steak with dry mixture.
(If cooking only one steak, use half the mixture and save the rest for future use.)
Coat a seasoned cast-iron skillet with olive oil; heat until smoking.
(You may want to do this outside on a propane grill, as the smoke could set off a smoke alarm.)
Sear steak on both sides; meat will be black.
