Pan Roasted Garlic Chicken
Pan Roasted Garlic Chicken is an moderately easy dinner. Made with 2 large chicken breasts (with bones), 2 tbsp. olive oil, 2 garlic cloves, sliced, 1 1/2 to 2 c. water* and 1/2 c. sliced mushrooms, this recipe delivers authentic, satisfying flavors. With a cleaver or sharp knife cut each chicken breast into 4 pieces.
Put aside.
Slice garlic.
In large pot or Dutch oven heat olive oil.
Brown garlic in oil.
Add chicken and brown well on both sides.
Add 1 cup of the water and reduce heat to low-medium. Pot roast chicken for about 1 1/2 hours, until fork-tender.
(Add mushrooms for the last 15 minutes.)
Salt and pepper to taste. Serve with pan drippings over pasta or rice.
