Mushroom Soup
Mushroom Soup is an moderately easy dinner. Made with 1/2 lb. fresh mushrooms, 2 sticks butter, 3/4 c. flour, 2 c. warm milk and 2 c. consomme, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Clean and slice mushrooms.
Make a roux with the butter and flour.
Cook roux for 2 minutes (do not blacken).
Add milk slowly, mixing well.
Add consomme; blend thoroughly.
Stir in mushrooms, heavy cream, salt and pepper.
Cook slowly for 10 minutes.
If soup is too thick, add warm milk.
Serves 4.
