Grandma Lydia's German Potato Salad
Grandma Lydia'S German Potato Salad is an moderately easy dinner. Made with 3 lb. potatoes, 6 slices bacon, cooked until crisp (save fat), 1/2 small onion, chopped, 1/4 to 1/2 tsp. pepper and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Boil potatoes with skin and a little salt.
Peel and slice. Add onion, chopped bacon and pepper to potatoes.
Heat half of bacon fat, butter and flour (mixed with a little water until smooth), 1 1/2 cups water, vinegar, sugar and salt.
Bring to a boil until thick.
Pour over potatoes and stir.
Serve warm.
May be prepared earlier and heated before serving.
Reheats in microwave especially well.
