Fresh Kielbasa and Sauerkraut
Fresh kielbasa simmers until juicy, then joins sauerkraut softened with onions, applesauce, and tomato sauce. Serve the hearty German-style platter with boiled potatoes and dark bread.
Cover the kielbasa with water and simmer gently until cooked through.
Saute onions in a large skillet until translucent.
Add sauerkraut, applesauce, tomato sauce, salt, and pepper; simmer until the kraut softens.
Cut the kielbasa into thick pieces and add it to the sauerkraut with a little cooking broth.
Simmer again so the sausage and kraut share their flavors.
Serve with boiled potatoes and slices of pumpernickel.
