Freeda Midkiff'S Clam Chowder is an moderately easy dinner. Made with 1/2 c. finely cut salt pork or bacon, 1 onion, chopped fine, 4 c. potatoes, cut in cubes, 2 tbsp. butter and 4 tbsp. flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place salt pork or bacon and onion in a pan and cook until onion is a golden brown.
Add 2 cups of water (clam liquid and enough water to make 2 cups) and potatoes.
Simmer until potatoes are tender.
Melt butter; stir in flour, milk and seasonings. Cook 5 minutes, stirring constantly.
Combine mixture; add clams. Heat; do not boil.
Add broken crackers.
Makes 8 servings.
