1 1/4 cups flour, salt, sugar and yeast; mix well.

Add the warm water and shortening.

Beat 3 minutes medium speed on mixer.

By hand, gradually add remaining flour to make a firm dough.

Knead on floured board until smooth elastic, about 5 minutes.

Place in greased bowl; and let rise until double.

Punch down dough and roll out lightly sprinkled cornmeal board.

Cut into 3 or 4-inch circles.

Cover; dough, about 30 minutes.

On lightly oiled griddle or frypan at 325Β° for about 8 minutes on each side, until golden brown.

Makes 12 to 14.
