Crispy Oven-Fried Okra
Crispy Oven-Fried Okra is an moderately easy dinner. Made with 1 3/4 lb. fresh okra, 1 1/2 c. yellow corn meal, 1/2 tsp. salt, 1/8 tsp. pepper and 1/2 c. nonfat buttermilk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash okra; trim ends and cut into 1/2-inch pieces.
Combine corn meal, salt and pepper in a medium bowl; stir and set aside. Combine buttermilk and egg in a large bowl; stir in okra.
Let stand for 10 minutes.
Dredge okra in corn meal.
Place okra on a baking sheet coated with Pam.
Bake at 450Β° for 40 minutes, or until crisp. Stir often.
