Cream of Spinach Soup

Steam until tender the carrot, onion, potato and garlic.
Purée in own water.
Steam spinach in 1 cup of water and then purée. Make a roux by whisking flour and butter.
Keep stirring briskly and add 2 cups milk in mixture slowly.
Cook over low heat, stirring until thickened.
Add spinach purée to the roux, along with salt and pepper.
Now add first mixture (carrots, etc.) to second.
Stir until thick over low heat.
Serves 4 to 6 people.
